MEGA VEGGIE SANDWICH

I made this mega veggie sandwich (my new regular meal!) for lunch this weekend. It has toasted bread (natural, from Blue Ribbon) with grilled vegetables and a thick garlic-based pesto sauce. I really loved all of the flavors and found it to be a good, simple (and filling!) lunch solution. I dipped it in balsamic and in the spring i think it would taste lovely with avocado.

especially among omnivores like myself, veggie sandwiches are way underrated.
