SHRIMP CEVICHE

Very easy to make!

Boil shrimp for 5 minutes. Chop and put into a bowl. Marinate in about 2 cups of various citrus juices (lemon, lime, orange, etc) for 4 hours. Add in spices, cilantro, avocado, red onion, tomato and cucumber and toss lightly.

Yum!

Martini glass?

For the sake of presentation, I tend to serve my ceviche in martini glasses instead of wine glasses - easier to get at, too!

But the overall effect of this dish looks great, and I love the addition of cucumber and avocado - clean and crisp plus silky and rich to complement the tang of the citrus.

Just this weekend, I made a ceviche of bay scallops, salad shrimp, red peppers, green onions, cilantro and jalapeno in a tequila-lime marinade.  I wish I had seen this sooner, as I might have tried it with some avocado, too!

I wanted to serve this dish in a martini glass, but I don't have any.    I'm going to have to go out and get some soon, and then I can start practicing my martini skills at home! 

The avocado adds a nice flavor to the ceviche, I would definitely recommend it.  I also used some serrano chiles in my mixture for that hint of spice and flavor.

Your scallop ceviche sounds really tasty...I'm going to have to try that next!

...they're small enough that they cure in the citrus without having to cook them first.  I marinated mine in the tequila-lime juice for about six hours before serving, but I probably could have served at four hours without any fear of the raw seafood being a danger.

If you can get to a World Market or a Bed, Bath & Beyond, you can probably find a set of four martini glasses with a pitcher for $20 or so.  They won't be phenomenal quality, but they'll do you well as serving pieces.  You might also check out local flea/outdoor markets...seems like there's always someone selling a set or a few loose glasses around here.

I'll definitely check out Bed, Bath and Beyond since there is one a few blocks from here.
