BEER BRAISED CHICKEN, COUSCOUS, AND COLCANNON

This was a quick meal I whipped up in under an hour for Friday night dinner at my house. It is a bit of a French/Irish inspired hybrid.
I took a butchered chicken, added it to the pot with potatoes and carrots, with a cocktail of different French spices and doused it with a bottle of Killians Irish Red Lager. Prep time 10 minutes, cooking 50 minutes.
Next I boiled some potatoes, mashed it up with some kale, butter, salt and pepper, and cheddar cheese. Prep time 10 minutes, cook time 40 minutes.
And finally I made couscous flavored with butter and tarragon. Cook time, 3 minutes.
