FRIED RICE

Fried rice is great for using up whatever you have in the fridge or freezer. Best tip I can give is make sure your rice is day-old and cold.
Heat oil in a wok, stirfry optional meat marinated in soy sauce, and remove from wok. Then stirfry carrot, garlic, ginger, and any other hard veggies. Add in softer veggies, and stir a while. Add cold rice, and stir, let sit, stir, let sit, etc. Season with soy sauce and a bit of oyster sauce. Keep stirring and sitting. Return the meat to the wok, along with frozen peas, corn, etc. Stir until heated through, and the rice is getting a few crispy bits. Serve with soy and hot sauces.
