1 cup espresso granita
1 shot coffee liqueur
1 shot white chocolate Irish Cream
Cool Whip

Prepare espresso granita by brewing instant espresso granules in hot simple syrup, then cool, pour into a pan, and freeze. Scrape with a fork every half hour once crystals start to form. When the crystals are dry, spoon into a glass, and pour the liqueurs over top for the "volcano" layering effect. Top with Cool Whip.
