- My wife and I have fallen in love with a calamari salad recipe we found in The Wine and Food Lover's Diet, a cookbook/diet guide from Dr. Philip Tirman.
The salad calls for a pound of fresh calamari (rings or steaks chopped small) sauteed with garlic and olive oil. We've added red pepper flakes to the calamari to give it a bit more bite. The squid cooks up quickly - three minutes, tops.
The recipe calls for the squid to be served hot over a bed of arugula and topped with ground pepper, a squeeze of lemon juice and shaved pecorino romano, but we've found that it's even better if you allow the calamari to cool and then toss it with the arugula and pecorino as a cold salad. It travels well and makes a great office lunch.
I just cooked up some of the calamari today - I'll see if I can get a picture of the finished product tonight and send it along.
