White Asparagus Soup (Weißen Spargel Suppe)

This is a dish that I had in late Springtime in Bavaria (Souther Germany), and it was FANTASTIC. I had to ask my host family for the recipe!

4 bunches of white asparagus (to be blanched)
2 small anise bulbs (diced)
1 cup cream
1/2 cup whole milk
2 tablespoons butter
1/4 cup all-purpose flour
salt and pepper to taste

olive oil
black pepper
pancetta or prosciutto (crisped in pan)

Melt the butter in a pot with the diced anise until translucent, about 7-8 minutes. Slowly add the flour (with sifter) and stir until all liquid is incorporated and the flour starts to brown slightly.

Add the cream, milk, and asparagus, and bring to a boil. Make sure to stir so the flour doesn't stick and the ingredients all mix properly.

Once the soup starts to thicken after about 5-7 minutes (should coat the back of a spoon), remove from heat and cover with plastic wrap. Allow mixture to rest for approximately 30 minutes.

Once it has rested, blend the soup on high speed in a blender, then pour through a strainer to remove any remaining chucks.

Pour the soup into soup bowls, and drizzle some extra virgin olive oil on top, add a few twists of freshly ground black pepper, and garnish with the crisped pancetta or prosciutto.

Looks delicious.  Does white asparagus give the soup it's green tint?  I've never cooked with white asparagus and have only seen it in the market.  Also is it's flavor different too?
