S'mores Cupcakes with Toasted Marshmallow Frosting

Happy summer!

Last weekend my boyfriend and I went to a graduation party on Shelter Island, and i thought the perfect thing to bring was some s'mores cupcakes (my own recipe!).

I was in a rush in the morning of the party and forgot to take pictures of the completed product, but i got a few pictures after all the guests got to the cupcakes. Only a few left! Next time i'll take more/better pictures.

Toasting the marshmallow frosting turned into a two person job! thank goodness for cupcake lovin' boyfriends

SMBC

So i tackled SMBC last weekend and it wasn't nearly as hard as i thought it would be. I totally succeeded. It's my new frosting of choice. So light and delicious and not super sweet. Next time i'll experiment with other flavors!

Christening Cupcakes

I baked three different types of cupcakes (and two different types of merigunes) for matthew's goddaughters christenings this past sunday (mothers day!). yum yum! i only got a few (bad) pictures because of the poor lighting. i hope you get the idea!

Chocolate Chili Cupcakes

I had three birthdays in a weeks time, and the last was my boyfriend, matthew's 23rd birthday. I made him these spicy chocolate chili cupcakes with dark chocolate chili ganche. i packed them up in my little cupcake carrying case and brought them out to the bar for his party. i have to say, i was pretty popular that night. they were gone in minutes!

i definitely want to try them again, but with a different type of chili, something with more kick. i had to add SO much! maybe a fresh pepper would make the difference.
