Happy summer!
Last weekend my boyfriend and I went to a graduation party on Shelter Island, and i thought the perfect thing to bring was some s'mores cupcakes (my own recipe!).
I was in a rush in the morning of the party and forgot to take pictures of the completed product, but i got a few pictures after all the guests got to the cupcakes. Only a few left! Next time i'll take more/better pictures.
Toasting the marshmallow frosting turned into a two person job! thank goodness for cupcake lovin' boyfriends

This is impressive! How did the marshmallow topping hold up-- did it have to be eaten right away, or was it able to sit for a couple hours (or more) and still taste good?
These look really fantastic-- they look beautiful and they sound like they'd taste AMAZING.

i've made the frosting the day before and refrigerated it and it was fine, this time i made the frosting that morning because i had to toast it. after they came out of the broiler the icing could easily slide off the cupcake, so i had to let it rest for a while. they made the almost 2 hour car ride just fine though!
